Red wines

Aristocracy, Appassimento, Negroamaro/Primitivo, Puglia, Italy
This house wine pays tribute to the centuries-old Appassimento winemaking technique. Its core principle is that grapes are left to ripen on the vines for an extended period, thus partially drying out. This process naturally causes them to lose some of their moisture, while simultaneously increasing the sugar content of the remaining grape juice. This forms the basis of delicious red wines that often have a unique and rich character. This red wine has a deep red color and aromas of red fruit and rich notes of spice that balance each other tastefully.

Bellavista Winery, Tempranillo, Murcia, Spain
Murcia is an undiscovered gem among Spanish wines. And that's a shame, because all the elements needed to make great wines are present in this southern region: a sun that works overtime, a beautiful terroir, and a pleasant coastal breeze. Bellavista also saw that they had the best conditions behind them. The Spanish classic Tempranillo was therefore planted in the best-situated spots in Murcia; where all the conditions perfectly combine. Before the grapes are pressed, a portion of the bunches are dried to give them a more intense and concentrated character. A technique borrowed from Italian Appassimento wines.
A dark ruby red color in the glass. The wine has a warm aroma palette of sultry red and dark fruit. On the palate, a beautiful balance between fruit and oak integration.

Vignobles Vellas, Cuvee prestige, Cabernet Sauvignon, Languedoc-Roussillon, France
The Vignobles Vellas vineyards enjoy sufficient coolness, resulting in a long growing season, giving the Cabernet Sauvignon grapes ample time to ripen. As soon as the harvest begins, the grapes are hand-harvested in the early morning and then aged in oak barrels in the Vignobles Vellas cellars. During this period, the wine becomes round and powerful with a soft attack. The aroma translates into an initial note of black and red fruit with light spice and a hint of oak. The palate of this Cuvée Prestige is both full and smooth, with initial black fruit notes complemented by pepper, vanilla, and licorice.
